Rödbetssallad - Red Beet Sallad
No Smörgåsbord is complete without the Red Beet Salad. (Some people prefer to add herring to the recipe and call it a Herring Salad).
Rödbetssallad or Red Beet Salad is also fantastic served with meatballs on an Open-face sandwich.
Red Beet Salad
8 - 10 pickled beets cut into small cubes
2 boiled cold potatoes (also cubed)
2 tart apples (Peeled and, you got it, also cut into cubes. I usually use Granny Smith)
1/2 small red onion. Finely chopped. (You can also use a yellow onion)
1 pickled cucumber. Cubed in small pieces.
3/4 dl (1/3 cup) pickled beet juice (from the jar of the beets)
salt and pepper to taste
(if you prefer Herring Salad you would also add 4 pieces of pickled herring cut up in to pieces).
1) Peel, chop and cube all the ingredients.
2) MIx it all together. Last add beet juice. Salt and pepper to taste.
3) Let it sit in the fridge until next day.
4) Garnish with hard-boiled eggs and/or a sprig of parsley.
