Sill - Matjessill - Matjes herring
Matjes herring is an especially mild salt herring, which is made from young immature herrings. They are caught in the North Sea at the end of May and beginning of June, while they still have some of their winter fat in them. The herrings are ripened for a couple of days in oak barrels in a salty solution, or brine.
